ANSIYA-STYLE BIRIYANI

This biriyani has my own recipe and i hope you all try it and enjoy. INGREDIENTS 4 Cup basmati rice

1 Kg Chicken or Mutton

4 + 2 big onion

25 green chilies

3 big tomatoes

3 TBSP Ginger-Garlic paste

Whole garam masala

2-3 TBSP Garam masala powder

2 TBSP Coriander powder

Salt

1 TSP Turmeric powder

1/2 cupCashew nut paste

Mint leaves

Coriander leaves

Ghee + Oil

Saffron color

Lemon

INSTRUCTIONS •Clean the rice and soak it for half an hour.

•Golden fry brown two sliced onions in ghee and keep it aside.(remember to keep this used ghee aside too for later use)

•Boil the meat in turmeric and salt.

•Now for the masala,in a pan,add some oil and put 4 sliced onions and fry it until light brown.

•Then add ginger-garlic paste ,sliced tomatoes and fry it well.

•On the other side,in another pan , add oil and green chilies and sauté it well and make a paste out of it in a grinder.

•Pour this paste on the frying pan of onions and tomatoes.

•Then add garam masala powder,coriander powder and turmeric powder and fry it.

•Then make Pudina and coriander paste and our it into the fry pan.

Sauté it well.

•Then add the boiled meat and sauté.

•Then add cashew nut paste and salt for taste.

MASALA IS READY !

•Boil this fry mixture well and keep it aside.

•Now boil the soaked rice.

(Rice shouldn’t be too boiled but should be medium boiled)

• In a big pan,add water, whole garam masala and salt for taste.

Let it boil well.

•Then add boiled rice to this.

•Now drain the rice.

NOW FOR THE FINAL PART !

•In a big pan,add the kept aside masala,the boiled rice and onion fried ghee.

(•Then In a small bowl,add squeeze lemon and saffron colour.)

•Add this colour mixture and spread it well.

•Then add chopped coriander leaves,golden fried onion.

•Repeat the last 4 steps again.

•On a low flame keep it for dum for 15 mins

And then it’s ready to serve
